Where do the activities on the timeline come from?
From the record itself. Notes anyone adds, and every change to a field, a stage or an owner, in the order they happened. Synced email lives on the contact and the company, which carry an address for it to match on; a deal does not.
Can two people own the same deal?
Yes. The owner field takes more than one person, and each of them is notified when they are put on the deal. There is no separate watcher list, and nobody is notified again on every later edit.
What happens to a deal when it is won?
It moves to your won stage and drops out of the weighted forecast, which counts open deals only. Converting it to an invoice is then one menu item on the deal, and a rule can raise a task to remind whoever has to do it.
